Taste of summer

To me this drink is a little piece of Hong Kong nostalgia but it's now loved by lots of my friends and family too. When I visited Hong Kong in 2010 (was it really that long ago already?!) not only did I eat some fantastic food, I also discovered some wonderful drinks. I had some amazing cocktails at the stunning Aqua Spirit bar in Tsim Sha Tsui for example, but this drink is definitely my favourite.

Honey Lychee Mint drink

I first tried this drink in a Thai Restaurant in Mon Kok but it's very simple to make.

Honey

Lychees (you can use fresh or tinned but I prefer tinned for price and ease) 

A spring of fresh mint.

Take a spoonful of honey, 2 or 3 lychees and a sprig of mint in a mug, pour hot water over this and leave to infuse. This is a lovely warmer in winter but the fresh flavours are perfect for summer. I imagine it would be lovely chilled too.
